Pattypan Squash with Basil

In this week’s CSA spotlight, I’m focusing on Pattypan Squash.

Pattypan Squash

Pattypan squash are a variety of summer squash that have a unique, UFO like shape.  These squash come in yellow, white and green varieties and are also known as scallop squash, sunburst squash and custard squash (among other names used).  This recipe is a great summer recipe since there are few ingredients and it uses basil, which is abundant during this time of year.  Although the squash look different, I found them to have a similar taste to yellow squash and zucchini.  While the kids aren’t big fans of squash they each had small portions of this side dish.  I served this as a side with chicken cutlets and mashed potatoes.

Chicken Cutlet, Mashed Potatoes, Patty Pan Squash

Pattypan Squash with Basil
Recipe slightly adapted from Food Renegade

Ingredients:
3 1/2 cups patty pan squash, sliced (approximately 7 small squash)
1/4 cup melted butter
1/4 cup fresh basil leaves, chopped
salt

Directions:
1.  Preheat the oven to 350 degrees F.   Spray a 2 quart cooking dish with non-stick spray.  Place a layer of squash slices on the bottom of the dish.  Drizzle some of the melted butter on top and sprinkle some of the basil and salt on top.  Continue layering this way until all the squash and basil has been used.  (I had 3 layers).

2.  When finished layering, cover the dish and cook in the preheated oven for 30 minutes or until squash is tender.  Serve warm.

July Book Reviews

Life According to Steph

It is time once again for Steph and Jana’s monthly Show Us Your Books link up.  I love seeing what everyone is reading and always end up adding way too many books to my goodreads to read list.  It was a good reading month in terms of number of books read – 13 in all!  It was also a pretty good month for quality in reading as well.  So here are my July book reviews.

Dad Is Fat by Jim Gaffigan – While I enjoy Gaffigan as a comedian, I’m just not a fan of his writing.  The humor just doesn’t seem to carry over as well when I’m reading versus listening to his comedy.  This book focuses on parenting and I could relate to some of the book, but the 5 kids in a 2 bedroom apartment thing got a little old.  I enjoyed his other book Food:  A Love Story a little more than this one.

The Flip Side by Shawn Johnson – This is the first fiction book written by the Olympic gold medal gymnast.   In this book Charlie Ryland is living a double life.  She’s “Charlie” famous gymnast at the gym and the rest of the time “Charlotte” normal high school student.  Of course her double identity is eventually discovered.  I found the secret identity aspect of the story unrealistic.  I had to remind myself while reading this book that it is YA.  It seems a little young even for YA and although she didn’t read it, I think that it’s appropriate enough for my 10 year old to read.

Meternity by Meghann Foye – Liz Buckley works at  baby/parenting magazine Paddy Cakes.  Fed up with work and missing out on a Paris trip because she has to cover for all of the moms out on maternity leave, she decides to be pregnant and take “meternity” leave.  During this time, she will get paid time off to figure out her life.  I saw controversy on Facebook regarding this book with the argument that maternity leave is a time for a woman’s body to heal from giving birth and bond with their baby.  A woman is not having “me time” during this time.  Regardless, this book was just okay for me, as I found Liz not very likable and thought the ending was disappointing.

The Museum of Heartbreak by Meg Leder – Penelope Marx tells the story of her heartbreak through 23 pieces in her Museum of Heartbreak.  This YA book includes friendship drama, boy drama and family drama.  Overall, just an okay YA read.

Turn Up the Heat by Kimberly Kincaid – Bellamy Blake takes a vacation to Pine Mountain for a weekend getaway with two girl friends.  When her car transmission dies on the way to the resort, she ends up meeting mechanic Shane Griffin.  Of  course there is instant attraction and they end up falling in love.  This book was a bit cheesy for me, with the romance being too convenient and set up for my liking.  I haven’t read a romance genre book in awhile and only read this one for a goodreads book reading challenge.  This was probably closer to a 2.5 rating on goodreads for me, but I gave it a 3 since they don’t let you give 1/2 stars.

When the Morning Glory Blooms by Cynthia Ruchti – This book tells the story of three women in three different time periods:  Anna (1890), Ivy (1950’s) and Becky/Lauren (present) who experience pregnancy out of wedlock.  I didn’t realize that this book was Christian fiction before putting it on hold and reading it, I found it a little to religious.

32 Yolks by Eric Ripert – This is the memoir of Chef Eric Ripert, of Le Bernardin.  After reading about his childhood in France and his culinary training, I have so much more respect for this man……and I need to eat at his restaurant!

Drive Me Crazy by Terra Elan McVoy – This is a middle grade fiction book that my daughter read.  It looked fun so I gave it a read.  It’s a cute story of two step-cousins on a road trip with their grandparents.

First Comes Love by Emily Giffin – I am a fan of Giffin’s and hadn’t read one of her books in awhile.  This book deals with how a death in the family has various affects on the other members.  There is also sister drama, friendship, dating and motherhood.  I found Meredith to be a pretty unlikable character and Josie and Gabe’s friendship a little intense, but overall enjoyed the book.

The Games:  A Private Novel by James Patterson & Mark Sullivan – This is book #11 in the Private series by James Patterson.  This book is set in Rio during the Olympic games.   This was as usual, a suspenseful, quick read.  I read this book at the end of July and found it weird to be reading a book that takes place in the immediate future (Rio Olympic Games).

Ice Cold by Tess Gerritsen – I have read several of Tess Gerritsen’s mystery/suspense books.  My husband and I used to enjoy watching the TNT series Rizzoli & Isles, which is based on this book series.  This is book #8 in the Rizzoli & Isles series.  The story focuses mainly on Dr. Maura Isles, which is nice since she tends to take a more minor role in the other books.  This was a suspenseful page-turner which I enjoyed.  Plus, it was a book that I finally read from my own bookshelf!

Summer House by Nancy Thayer – This is the story of a wealthy family and their drama spending the summer at the family house in Nantucket.   Thayer’s books tend to be summer reads for me, as they often take place in the summer on various island and beach locations.  This book kept my interest, however I didn’t like how some things were unresolved.

Tricks by Ellen Hopkins – I have read most of Hopkins books and am a fan of her YA books written in poetry form.  While I enjoy her writing style, I have to admit that this book’s topic was almost too much for me.  The books focuses on five teenagers with dysfunctional lives who end up turning “tricks” to survive.  It’s disturbing and heartbreaking to read but even scarier to realize that this kind of stuff is happening in real life.

Five on Friday {The First in August}

Five on Friday

Happy Friday!  We have enjoyed perfect weather this week, finally experiencing some comfortable temperatures.  This week the kids had some play dates, we started purchasing school supplies, and we are getting ready to spend a few days down in Maryland visiting my sister and her family.  The kids can’t wait to see their cousins.  A vacation for October was also booked (see below!) which we are all very excited about!  This week we were:

1. Watching –  My husband and I have continued to watch Stranger Things on Netflix.  I have been watching Scandal and a couple episodes of Odd Mom Out.  We all watched The Princess Bride.   The last time I saw that movie, I think I was my daughter’s age (10)!

2. Reading – I most recently read Because of Winn-Dixie, which is my daughter’s required summer reading for school.  I am currently reading The Last Time She Saw Him, a mystery/thriller.  My son and I are reading The BFG by Roald Dahl together, as well as listening to/reading Harry Potter and the Goblet of Fire.

3. Dining Out – This week the kids and I went out for lunch at a local BBQ restaurant where I enjoyed this Beef Brisket sandwich.  We then went next door and brought home these doughnuts, which we saved to share with my husband, when he got home  from work.

4. Family Fun – It rained most of this past weekend.  Saturday, we went to a neighbor’s pool party and BBQ, although most of the time was spent indoors as it poured most of the afternoon and evening.  Sunday, we did a family art project, where we each painted a canvas reflecting a chosen season.  My son chose summer, my daughter chose spring, my husband painted winter and I painted fall. These will soon be hanging on our living room wall!  We also went bowling Sunday evening and then came home and watched The Princess Bride.

5. Excited About:  We have booked an October vacation for an early celebration of my husband’s 40th birthday!  It’s about a month early, but we had to take advantage of the kids having some days off from school.  We have booked a Carnival cruise to Saint John and Halifax.  We’ve never done a Canada cruise before and are excited to see someplace new.

Summer Bucket List Update

It is hard to believe it is already August!  We are halfway through the summer and I thought I’d share our summer bucket list update.  We are making great progress!  Although not on the original bucket list, we attended a polo match and have eaten some great, local food as well!

Berries

Go strawberry picking at Fishkill Farms.   We missed strawberry picking, since they are usually only available in June.  However, we did get to go blueberry and raspberry picking!  You can check out our post here.

HV Renegades

See a Renegades baseball game.   We went to a game in July and had a lot of fun.  We were chosen to get a seat upgrade and got to sit right behind home plate!  There was also a great fireworks show after the game!  If we have time before the season ends, I would go back to see another game!

FDR Park

Take a hike and geocache.  We took a trip to both FDR and Bear Mountain State Park and hiked and did some geocaching.

Vanderbilt Mansion

Visit the Eleanor Roosevelt National Historic Site and the Vanderbilt Mansion.  My daughter has her Every Kid in a Park pass that expires this month.   So far we were able to visit the Vanderbilt Mansion and even found a geocache on the property!  They are doing renovations on the mansion and there was fencing and supplies around the outside, making it not very photo-worthy.  The gardens however, were beautiful!  We haven’t yet made it to the Eleanor Roosevelt National Historic Site though.  We have to try to fit this in soon!

Walkway Over the Hudson

Walk the Walkway Over the Hudson.  We did the Walkway Over the Hudson on a super hot day!

Have a picnic.  We visited FDR park on Father’s Day and had a picnic lunch before we went geocaching.

Mini Golf

Play mini golf and have lunch at Red Rooster Drive-In.  We did play mini golf at a local course but have not yet made it to Red Rooster.

Enjoy an outdoor concert.  We saw a couple of local bands play at a park before we watched Goonies outside on the big screen.

Visit Untermyer Gardens and the Hudson River Museum in Yonkers.  We still have to do both of these!  I keep seeing beautiful pictures on Instagram of Untermyer Gardens and can’t wait to see it in person!

Daily Moos Creamery

Summer is all about ice cream!  We are definitely going back to The Hudson Creamery (the Breakfast Club Sundae was so good!) and I’d like to visit The Blue Pig.  So we revisited The Hudson Creamery, where I enjoyed the Serafina sundae.  We still have to visit The Blue Pig.  However, we visited a new local ice cream shop called Daily Moos Creamery, which serves flavored soft serve!

Hot Dippity Donuts

And when not indulging in ice cream, we’d like to eat some doughnuts.  While we like Dunkin’ Donuts, we hope to get to Gypsy Donut and Hot Dippity Donuts.  We’ve been to Hot Dippity Donuts twice now!

Tween July Reads

My daughter has been loving all the reading time that summer has allotted her and she has been taking full advantage of it!  Her love of reading makes this mom proud!  Below are short reviews of my ten year old’s July reads, written by her. Hopefully, they will help provide reading recommendations and inspiration to other tween children!

Agnes Parker…..Happy Camper? by Kathleen O’Dell – This book is about a girl named Agnes Parker whose best friend Prejean Duval is going to camp with her. The problem is, Prejean is not in the same cabin as Agnes! Agnes is stuck with the snobby Nyssa Vanderhoven, who likes Agnes and Prejean as much as they like her [which isn’t much!], as a bunkmate. Prejean is lucky because she gets friendly, fun girls in her cabin who all like each other. Read this book to find out if Agnes is stuck in a cabin where she knows no one and has a horrible time, or if she has the time of her life pranking and making friends.  I gave this book 3 ½ stars because it shows true friendship.

Cassidy’s Guide to Everyday Etiquette (and Obfuscation) by Sue Stauffacher – CGTEEAO [short for the title!] is about a girl named Cassidy whose Grandmother forces Cassidy to go to etiquette school in her will. So Cassidy has to be away from all her friends, family, and fun for 5. WHOLE. WEEKS. I mean, she goes home every day after classes which are on Wednesdays and Fridays every week for 5 weeks. On top of all that, Cassidy’s best friend Jack has a crush on their new neighbors, the Bensons. If you read this book I promise that you’ll never look at etiquette, mischief, and friendship the same again. I gave this book 3 ½ stars because this was a very long book. I recommend this book for tweens and older.

Dive In! (Pool Girls #1) by Cassie Waters –  Dive In! is about a girl named Grace Davis who is ready for summer and RSC swim club. She has to earn ALL of the money for the swim club herself, but Grace thinks it’s worth it. When her best friend Christina ditches her for a few popular girls in her grade that like Grace as much as she likes them, [not very much!] Grace reaches out to her new BFF Jacie for encouragement. Grace finally crushes on one of the most popular boy on the swim team and in her school! I gave this book 3 ½ stars out of 5 stars because this was an interesting book and makes me want to dive in that pool!

The Melting of Maggie Bean by Tricia Rayburn – The Melting Of Maggie Bean is about a 12-year-old girl named Maggie who is overweight with big bones.  She doesn’t like the diet that her doctor puts her on but she wants to be skinnier.  She is a chocolate addict and has a hidden stash in her room.  Her best friend Aimee encourages Maggie to try out with her for Water Wings, the school synchronized swim team.  To prepare, Maggie gives up her chocolate and turns a new leaf.  She ends up impressing everyone at tryouts, despite her size and gains more confidence.   I gave this book 4 ½ stars because it shows new beginnings.

Mission Hurricane (The 39 Clues:  Doublecross #3) by Jenny Goebel – Mission Hurricane has the same characters as the The 39 Clues series except Grace’s husband Nathaniel Hartford is now an Outcast. Doublecross is a new series in which the Cahill KIDS have to save the world before people die. In this book, the Outcast is about to drop a nuclear bomb on the people of Amsterdam, Holland on King’s Day. Will the Cahill kids be able to save the day, or is everyone in Holland in mortal peril? I gave this book 4 ½ stars because of the serious adventure involved.

Out of My Mind by Sharon M. Draper – Out Of My Mind is about a girl named Melody who can’t talk, walk, or move. She is miserable that she can’t communicate and tell everyone that she is NOT a baby anymore and that she is VERY smart, but how can she? She can’t talk! That is until her parents get her the Medi-Talker that has big buttons the perfect size for Melody thumbs. She can enter thousands of words and the Medi-talker will speak the words she wants aloud. The awesome part is Meoldy can print things out of her Medi-talker too! Everything goes fine for Melody until her little sister Penny comes along. Now, her parents need lots more help with Penny, a baby, and Melody, a stubborn, disabled 11 year old. On top of all that, Melody misses the plane for her flight to D.C. for the Whiz Kids team and gets sad. I give this book 4 ½ stars because I think it is absolutely amazing. I recommend this book because it shows an example that we should treat disabled kids better.  They are JUST like us in most ways, except better.

Pippa Morgan’s Diary by Annie Kelsey – This book is about a girl named Pippa who tries becoming friends with Catie Brown by telling her that she auditioned for the show the Voice. But that’s so not true. Pippa lied because she wanted to have a new friend that would actually want to be her friend. Unfortunately, Catie is popular so word gets around fast that Pippa “auditioned” for The Voice and everyone wants her to sing.  That would be great but Pippa CAN’T SING. She is so terrible at it that once while she was singing, the neighbor almost called the police because he thought that Pippa was being mauled by cats. Then, Catie signs up Pippa for the talent show, but, remember, Pippa can’t sing. Read the story to see how things go from bad to worse, and then to good. I give this book 3 ½ stars.  I recommend this book to kids my age.

The Second Life of Abigail Walker by Frances O’Roark Dowell – The Second Life Of Abigail Walker is about a girl named Abigail Walker who is considered “fat” in her school by some very nasty girls. Abigail follows a dog that looked like it wanted her to follow her and meets a boy, Anders, around her age on the other side of the creek. When she goes over to Ander’s side, she learns that his family runs and owns a horse training business. His father is a war veteran and survived a bomb attack.   He is obsessed with a Lewis and Clark Expedition project, which Abigail and Anders help him with. There is also a magical fox in the book that leaps into stories and helps Abigail.   I gave this book 4 ½ stars because of the fact that this book was very entertaining while I saw Abigail turn into a new Abigail Walker.

Turning Up the Heat (Dish #2) by Diane Muldrow – Turning Up The Heat is about 4 girls named Peichi, Shawn, Amanda, and Molly. They are in a cooking class with Natasha, a girl who everyone thought was annoying and mean. That was until, she volunteered to help with Amanda and Molly’s Mom’s surprise party. Natasha was a great helper so they invite her to be their friend and to be a part of their new cooking club. I gave this book 3 ½ stars because it was a great book with tons of adventures for cooks and kids. I highly recommend this book for rising or current 5th graders. In fact, this book is on my 5th grade Recommended Reading list.  It is actually the second book in the series so I will have to go back and read the first one.

Weekly Meal Plan {Week 47}

2016 Calendar

Happy first day of August!   Summer is flying by!  Our weekly CSA is keeping us loaded up with fresh veggies which I am trying very hard to use!  Here is what was on our menu plan this past week.

Saturday: We spent the day with friends at their lake and then had dinner at their house.

Turkish Chicken

Sunday:  We hosted our monthly supper club.  This month’s theme was Turkish.   We made grilled chicken which we served over rice pilaf, eggs cooked in a pepper and onion dish as well as a grilled eggplant dish with spicy chickpeas and walnut sauce.

Grilled Aubergine with Spicy Chickpeas

Monday: We had lots of leftovers from Supper Club so we had them for dinner.  They were just as good the second day, and I got a night off from cooking….score! 

Tortellini with Creamy Pesto Sauce

Tuesday: I made Tortellini with Creamy Pesto Sauce using The Pioneer Woman’s recipe.  I was able to use the basil that I’ve been growing on the deck for the pesto sauce.  Yum!  I knew the kids wouldn’t like the pesto sauce, so I didn’t pour it over all the tortellini.  Instead the kids had butter and parmesan cheese on their tortellini.

Roasted Vegetable Wrap

Wednesday:  I made Roasted Veggie & Goat Cheese Wraps adapted from Vanilla Bean Café.  I used a variety of vegetables from our CSA which I roasted.  I put them on wheat flatbreads but didn’t actually like the flatbread very much.  I served the wraps with corn on the cob, mini tater tots and onion rings. 

Teriyaki Burger

Thursday:  I made Teriyaki Burgers with Grilled Pineapple and Onions from Recipe Runner.  I used ground beef instead of ground turkey.  I also didn’t make the avocado cream sauce and instead used guacamole.  This recipe involved a bit of effort, making the homemade teriyaki sauce, cooking the burgers, and then cooking the pineapple and onions.  However, they were super tasty!  I served these with sautéed Swiss Chard and Breaded Squash Sticks.

Teriyaki Pizza

Friday:  We used the leftover teriyaki sauce to make a Teriyaki Pizza.  We used the leftover roasted vegetables and goat cheese to make another pizza.  Both were pretty good and a great way to use up leftovers!
