Happy Friday! I’m still in disbelief that May has arrived! The school year has flown by! It was another busy week, but I think things are finally starting to slowly wind down. On the horizon are AP and IB exams, the senior prom, senior week and graduation! Here are five from this week:

1. Rent the Musical – Last weekend our high school put on their spring musical which this year was Rent. I saw this twice on Broadway back when it first came out. My son is on the stage crew and several of his friends were in the production. It was nice to see the culmination of the months of work they’ve put into the show and they did a phenomenal job!

2. Reading – I didn’t get in as much reading time this week that I would have liked to. However, I am halfway through Just For the Summer by Abby Jimenez and am loving it! She has become one of my favorite authors! I am hoping to finish this over the weekend.

3. Cooking – This week’s meals included Crispy Potato Taco Bowls, Korean BBQ Tofu Bowls, Shrimp Alfredo Pasta (using jarred sauce) and Beyond Burgers with Fries. Please let me know if you have a favorite jarred alfredo sauce. While I much prefer homemade alfredo sauce, the jarred variety is so easy when I need a quick dinner. I just haven’t found one that I really like.

4. Admitted Students Day – Sunday we drove up to Binghamton for Admitted Students Day. We took one of my daughter’s friends, who had just committed, along with us. It was an informative day and my daughter is more excited to begin her new journey!

5. Snacking – Although I eat salads for lunch (see below for a link to some of my favorites that I just posted), I do my fair share of snacking. These Buffalo Style & Blue Cheese Flavored Potato Chips were a fave this week. I didn’t get much blue cheese flavor, but they had a nice tang.

I had to stop at the grocery store on the way home from work for just a couple of things. I saw this piece of Turtle Cookie Cake and had to get it. It is two layers of cookie cake with layers of chocolate icing, sprinkled with pecans. I’m not a huge sweets and chocolate eater. I much prefer savory over sweet. However, this looked so good and was an impulse purchase. Reminder to never go to the grocery store when you’re hungry! It was definitely on the sweet side, but I’ve been eating just a couple of bites every day.

  1. I love high school musicals and productions! I don’t think any of our local high schools have them anymore though… it’s so sad. Yay for accepted student day going so well; we found that it was definitely a motivating day to be on campus too. That turtle cookie cake would have tempted me too.

  2. May sounds like a busy month!
Well done to the school for putting on the musical.
All of the food sounds so good and how exciting for your daughter. Good luck to her.
