The Happiness Project

Today, in lieu of the regular weekly meal plan post, I am linking my review of the book The Happiness Project by Gretchen Rubin with Cait’s Cozy Corner.  I discovered that Cait chose this as her monthly book pick while I was in the middle of re-reading it.  Yes guys, I was doing a rare re-read of a book.  According to goodreads, I first read The Happiness Project back in 2012 and rated the book five stars.  Fast forward almost four years later and I am still giving this book five stars.  As many of you know, this year, I chose “happy” as my one little word for the year.  I’ve really been trying to focus on adding more happiness to my life.  I thought it fitting to do a re-read of The Happiness Project.

When I chose “happy” for my word of the year, I felt similar to Rubin’s sentiments for her happiness project, “I am happy – but I’m not as happy as I should be.  I have such a good life, I want to appreciate it more – and live up to it better…..”

In this book, Rubin spends a year dedicated to trying to be happier.  Each month she focuses on a different aspect of her life to “work” on gaining more happiness including marriage, parenting, work, leisure and mindfulness.  She also includes five targets each month that will hopefully help her in reaching that particular happiness goal.  For example, in January, her happiness goal is to “Boost Energy.”  She aims to do this by going to sleep earlier, exercising better, declutter and organizing, tackling a nagging task and acting more energetic.  Rubin includes research and anecdotes to support her efforts.

In my own focus on happiness, decluttering & organizing and exercising are some of my own goals, so I could relate to this book just from reading the first chapter.  I don’t feel like there are many books that I have to or want to own.  However, this is a book that I plan on buying myself a copy of.  Rubin provides so much useful information and takeaways that it’s hard to digest and take everything in in one reading.   Plus, it’s inspirational in starting my own Happiness Project.  Many others must feel the same way, as many Happiness Project Groups have formed and Rubin offers a Happiness Project Toolbox Website to assist readers with their Happiness Projects.

If you are a Rubin fan like myself, I highly recommend listening to her Happier podcast and reading her other books Happier at Home (where she focuses on making her home a happier place) and Better Than Before (where she focuses on habits).

As if you couldn’t already tell, I highly recommend this book.  I think everyone can take away something from this book and we can all use a little more “happy” in our lives!

Friday Favorites – Kids Favorites Edition {Week 50}

Friday Favorites

Happy Friday!  I am so glad that this week is over.  Last weekend started off well, with a visit from my sister and nieces.  However, they passed their recent sick germs to my daughter who ended up with a bad, luckily only 24 hour, stomach bug.  Luckily, we are all well now and are looking forward to a busy weekend.  I am going to my first blogging event tomorrow and I am so nervous!  I am going to a Snapware and yoga event with Kristin McGee down in NYC in the morning!  Eek!  I will of course write a post all about it!  This week, I am sharing some of my kids’ recent favorites.

Sick Girl

1. Feeling better – My daughter’s number one favorite of the week was not being sick anymore.  My kids have been lucky enough to not have a stomach virus prior to this past week.  My daughter hates throwing up and reminded me that she hadn’t done so since she was about five years old (she’s almost 10!).  So she was pretty miserable on Sunday/Monday when she was pretty much vomiting all day. She’s now back to her usual self and eating a normal diet and she’s so happy!

2. Origami Yoda series books – My son has just gotten into reading this series of books and then making the origami characters, from the directions at the end of the books.  The series follows middle school student Dwight and a cast of classmates who create origami Star Wars characters which change their lives.

3. Hotel Transylvania 2 – The kids had an early dismissal Tuesday due to inclement weather.  My daughter was already home sick, so after lunch we watched this movie together, which I wrote about in yesterday’s post.

4. Friendly’s Limited Edition Royal Banana Split Ice Cream Bars – I like to buy ice cream bars since they are individually packaged and great for treats for the kids.  I prefer my ice cream out of a pint container, so buying these also limits my ice cream eating!  The last time the kids and I went grocery shopping together, they couldn’t decide between these bars and the Orange Cream Fruit Swirl Bars, which they ultimately ended up choosing.  So, I recently picked these up on a shopping trip as a surprise for them.  It’s banana ice cream and strawberry ice cream with pineapple pieces covered in a chocolate shell.  I had no desire to try these but they ate these bars all week and liked them a lot.

5.  February Nerd Block Jr. Boys – This box came in the mail the other day and we haven’t had time to open it.  The kids are bursting with excitement and it WILL be opened sometime this weekend!

Watching Lately

Watching Lately

I will freely admit that my idea of a good night usually involves me in my pajamas, sitting on the couch and either a) reading a good book, b) eating popcorn while watching a movie or c) binge-watching a television show on Netflix.  I thought it would be nice to share what the family and I have been watching lately and offer some possible viewing recommendations.

American Girl:  Grace Stirs Up Success – My daughter and I watched this movie earlier in the week on Netflix, when she was home sick.  If your daughter loves anything American Girl, like my almost 10 year old does, than she will probably enjoy this movie.  Grace Thomas was the 2015 Girl of the Year and Grace Stirs Up Success is the most recent American Girl movie.  Grace loves bike riding and baking, often helping her grandparents in their bakery.  She ends up unexpectedly spending most of her summer in France, assisting her uncle in his French pastry shop.  As is typical of these movies, conflicts occur and lessons are learned by various characters.

The Intern – I end up putting a lot of new DVD releases on hold at the library, not always knowing a lot about the movie.   This was the case with this movie, which was released on DVD in September of 2015.  Ben Whittaker (Robert De Niro) ends up participating in an intern program at e-commerce fashion start up About the Fit, which is run by founder Jules Ostin (Anne Hathaway).  Although he’s the “intern,” Ben ends up teaching everyone else a thing or two.  This was a funny, feel-good movie.

Twinsters – I recently watched this documentary of Netflix after hearing about it on the Spawned podcast.  This is the true-life story of identical twins born in South Korea, separated at birth, adopted by two different families.  A YouTube video ends up being the catalyst for these two girls to “meet” over the internet and realize that they might be sisters.  This was super interesting, maybe more so for me since I was adopted from South Korea as a baby.  This is one of those instances where if it wasn’t for technology, this reunion probably wouldn’t have happened.

Hotel Transylvania 2 –  This sequel to Hotel Transylvania was released on DVD in September 2015.  We just got it in from the library and watched it this week when my daughter was home sick and my son had an early dismissal from school due to inclement weather.  In this movie, Mavis and Johnny reveal to Drac that she is pregnant.  Soon their son Dennis is born, but no one is sure if Dennis will have vampire powers, which they will know by his fifth birthday.  The movie focuses mainly on the struggle of Mavis wanting to give Dennis a “normal” human life and her father preparing him to be a vampire.  The kids enjoyed this movie.

Homeland – This show airs on Showtime and has recently finished its fifth season.  Seeing that we don’t get cable (or Showtime) and its not available on Netflix, I have been borrowing the DVDs from the library.  My husband and I have been binge watching this show, and have just finished watching season 2.  This series is a political thriller, starring Clare Danes as Carrie Mathison, a CIA officer, and Damian Lewis as Nicholas Brody, a U.S. Marine Sergeant, who was held as a prisoner of war in Iraq for eight years.  This is a fast paced, suspenseful show!

Welcome to another week of tips and try-its.  Here are five things you might like to try this week:

1. Clean our your purse –  Collect all of the receipts and throw out all the expired coupons, dirty tissues and empty gum wrappers.  Go through and decide if you need each of the items in your bag.

2.  “5 Ways to Love Parenting More” – On episode 364 of the Mighty Mommy podcast, host Cheryl describes five ways that we can love being a parent more.  Her suggestions are a nice reminder to have more fun as a parent.

3.  Eat a bowl of chili – The last Thursday of every month, (February 25th this year) is National Chili Day.   I’m not a fan of beans in my chili and we all enjoyed this chili from Melanie Makes.

4.  Write a note and put it in your child’s lunch bag –  My kids love getting surprise notes or jokes in their lunch bags.  I don’t do it often and when I do, I don’t let them know so they are surprised when they go to eat!  Here is a great collection of printable jokes and notes.

5. Go for a walk – Are you getting in the recommended minimum of 10,000 steps a day?  I don’t belong to a gym and my Fitbit has not been put to good use.  I am not tracking anywhere near 10,000 steps daily.   Besides tennis and yoga, I’m trying to increase my physical activity by taking walks.  The weather is getting nicer and I can listen to podcasts while I get in some steps.  Why don’t you get out and get some steps in too?!

5 Slow Cooker Recipes Worth Making

For my busy family, the slow cooker is a kitchen tool necessity.  I love being able to throw everything into the slow cooker in the morning and have dinner ready when needed. Today I decided to share with you five slow cooker meals that my family has really enjoyed.  In no particular order, here are five slow cooker recipes worth making!

1.Slow Cooker Cola Barbecue Beef – This slow cooker beef from Melanie Makes was so tender and delicious!  This was the first time I cooked a chuck roast in the slow cooker.  However, since making this recipe it hasn’t been the last!  Another plus of this recipe is that unlike most beef slow cooker recipes, this one doesn’t require you to sear the roast before putting into the slow cooker.

Slow Cooker Stuffed Peppers – These stuffed peppers from Damn Delicious were a pleasant surprise.  I rarely make stuffed peppers, but this recipe had me questioning why I don’t make them more often.  Besides pre-making the rice, which I did in the slow cooker the night before, there is no other pre-cooking for this recipe.

3. Slow Cooker Lentil and Brown Rice Tacos –  This is another recipe from Melanie Makes.  (Can you tell it’s a favorite food blog of mine?!!)  These are a vegetarian family favorite.  They are a flavorful and filling taco that even the kids enjoy.  This recipe has made several appearances on our weekly meal plan, which is a rare occurrence!

4. Crockpot Potato, Cheddar and Ale Soup – Writing about this soup from Pink Parsley reminds me of how tasty it was and how I should make it again while the weather is still cool.  There’s a little bit of prep work for this – peeling and cutting the potatoes and some microwaving of the potatoes with some other ingredients for five minutes.  At the end you need to blend the soup, which I highly recommend doing with an immersion blender.

5. Queso Crockpot Chicken Chili – This chili from Pinch of Yum was delicious!  We ate it almost like a dip using tortilla chips.  Again, this is another recipe that I think will be making another appearance on our menu soon!

Friday Favorites {Week 49}

Friday Favorites

Happy Friday!  This week has been a very cold, but relaxing and fun week around here!  The kids had the week off for February week.  Saturday we drove up to Rhode Island to visit my parents for a few days.  Then on Monday, my husband and I headed back home and left the kids to spend some quality time with their grandparents.  We were able to get in two dinner dates, which of course made my favorites this week!

1. Dinner Date #1 – Over the summer, my parents gave my husband and I a gift certificate to a nearby restaurant.  This tells you how rarely my husband and I get out for date nights, since we just used it this past Tuesday night!  Yes, seven months later it was finally put to use.  We had a great dinner after getting our taxes done.

2. Dinner Date #2 in NYC – Instead of getting presents for each others birthdays, years ago, my brother-in-law suggested that we got out for a really nice dinner to celebrate.  Instead of three times a year, (his birthday, my birthday and my husband’s birthday) it has slowly turned into maybe once a year if we’re lucky!  Knowing the kids were with my parents this week, we planned a dinner.  He had previously eaten at Juni and remembered it being “awesome” so we made reservations.  We did the five course tasting menu and thought the meal was really good!  The Peekytoe Crab appetizer I had that had cilantro and jalapeno powder and topped with uni was one of my favorite dishes of the evening.  We are so fortunate to live so close to New York City where there is an abundance of amazing restaurants.

3. Peanut Butter Kiss Cookies – The kids did some baking with their grandparents and brought home a bunch of these Peanut butter Kiss Cookies that they made.  These will be put in the freezer so we can enjoy them for awhile!

4. The Happiness Project – According to Goodreads, I first read this book in 2012.  My word for the year is “happy” and I thought it fitting that I do a reread of this book.  I am about halfway through and I am enjoying it as much as I did the first time.  I really enjoy Rubin’s research and self-experimentation with this project.

5. Bookmarked Recipe of the week:  These Jamaican Jerk Fish Tacos with Plantain Fried Rice and Pineapple Salsa from Half Baked Harvest.  All I can say is…..yum!

February Minimalist Challenge Update

February Minimalist Challenge

So here we are, half-way through February, and I thought I’d give you a quick update on our family minimalist challenge.  As a family we agreed to declutter and get rid of things everyday throughout the month of February – on February 1st, one thing, the 2nd, two things and so on.  Today is February 18th and we are getting rid of eighteen things.

My husband and I have been cleaning out our closet and have ended up getting rid of a lot of clothing and shoes.  I have also been getting rid of my old teaching things – books, games, supplies, etc.  We are counting each article of clothing as one item and each book as a single item as well.   We have been having the kids get rid of only one item daily, and most of those items so far have been books.  My son reminded me that right before Christmas we had done a big room cleanout in preparation for their new presents and they both got rid of a lot of stuff then.  He’s right, but there’s always more things they can get rid of!

I’ve realized that we haven’t been too systematic about how we are gathering things to get rid of.  So, for the rest of the month, I really want to focus on going through area by area in the house to figure out what we want to keep and what we want to get rid of.  Overall though, so far, my husband and I have been finding it easy to get rid of things and honestly, I think we could probably find enough “stuff” for another month of this challenge……but we’ll see!

Tuesday Tips and Try-Its {Week 2}

Welcome to the second edition of Tuesday Tips and Try-Its.  I thought this would be a fun little feature sharing some quick ideas and other fun stuff from around the web.

1.  Quick cleaning tip: The flu season is still among us.  We all know that you can help fight germs by washing your hands and using hand sanitizer.  Take a minute and use disinfecting wipes or your household cleaner of choice and wipe down all the light switches and door knobs in your house.  These are some of the most high-traffic germ areas which you can disinfect in a matter of minutes.

2.  Tax time – Yes, sorry to remind you that it’s tax season.  Here’s a reminder to make your tax appointment, or if filing your taxes yourself, set a date when you will sit down and actually do them!  As our tax documents have been coming in we have been storing them in a manila folder so that they are all together.  You can check out this article to see what’s new for your 2015 tax return.

3.  Visit Nantucket – The weather’s freezing but you can pretend it’s summer and you’re on the island of Nantucket by reading Island Girls by Nancy Thayer.  Join three estranged sisters (from three different moms)who must spend the summer together at their deceased father’s house, if they have any hopes of an inheritance.  This is a fun, summer-themed read that will make you wish the weather was warmer and you were on a beach in Nantucket!

4. Try Yoga – I posted about Yoga Camp in my most recent Friday Favorites.  From YouTube channel Yoga with Adriene comes a 30 day Yoga Camp.  If you’ve never tried yoga before or have been out of practice, like I have, this is a great way to get back into it.

5. Bake – Cold weather is a perfect excuse to bake something.  I’m partial to muffins, since I can freeze them.  Try these Chocolate Chip Coffee Muffins!

Weekly Meal Plan {Week 31}

2016 Calendar

Happy President’s Day!  If you live on the Northeast coast, did you survive the bitter cold temps this weekend?!  Hopefully you had an awesome weekend and are enjoying a day off like we are.  We are currently on our way home after spending a weekend up at my parent’s house in Rhode Island.  You can read more about how we meal plan, if you are new to the process.  Here’s a look at what was on our menu this past week.

Hot Dogs with the Works

Saturday – My husband made a hot dog party with toppings including home-made frizzled onions, onions in red sauce, chili and cheese and served it with French fries.

Super Bowl Snacks

Sunday – As I’ve mentioned, I’m not into football and the only reason I like the Super Bowl is that it’s an excuse to eat tasty snack foods.   My husband made fried ravioli and chili with rice and we bought chili con queso with tortilla chips.  It was really good!

5 Ingredient Butternut Squash, Arugula and Goat Cheese Pasta

Monday – I made 5 Ingredient Butternut Squash, Arugula and Goat Cheese Pasta from Gimme Some Oven.  I omitted the pine nuts, so my version was only four ingredients!  This was an easy vegetarian pasta dish.  Roasting the butternut squash sweetens it even more and even the kids liked it.

Mango, Black Bean & BBQ Chicken Rice Lettuce Bowls

Tuesday – I made Mango, Black Bean, & BBQ Chicken with Rice Lettuce Bowls with Chile Lime Vinaigrette from With Salt & Wit.  I’ve just started on the whole dinners in a “bowl.”  They are great because you can add or substitute ingredients of your choice.  These BBQ chicken bowls were a hit with the family.

Wednesday – At the last minute I realized that last Wednesday was Ash Wednesday and we couldn’t have meat.  I didn’t have time to stop at the grocery store to pick up salmon, so I made Hoisin Glazed Shrimp Noodles adapted from this recipe from Every Day with Rachael Ray.  I was able to use some of the rice vermicelli noodles that we had in our pantry.  This was quick, easy and tasty enough although it definitely didn’t make the repeat list.

Cashew Chicken

Thursday – I made Cashew Chicken in the crockpot from Dainty Chef, which I served with rice and veggies.  I added the cashews at the very end as more of a garnish  The sauce for this was kind of salty but it was a quick and easy dinner.

Friday – Last Friday was super busy.  My husband came home from work a little early and helped make the pizzas so we could eat dinner in between all the scheduled activities.

Friday Favorites – The Week Before Vacation Edition {Week 48}

Happy Friday!  This was a crazy week here.  We had some snow earlier in the week causing an early dismissal and a 2 hour-delay, throwing everyone’s schedules off.  The kids were busy with activities and now finally, they are off for a week!  We are heading up to Rhode Island for the weekend after our Saturday morning activities and then the kids are spending a few days up there alone with their grandparents.  So, the husband and I are looking forward to a few, quiet, child-free days together.  However, I am not looking forward to the -25 degrees it’s supposed to feel like along the East Coast.  Have I mentioned how much I hate the cold?!!!  Here are some of our favorites from this past week:

Super Bowl Snacks

1. Super Bowl Food – I am not a football fan, so the Super Bowl doesn’t interest me.  I do like watching the commercials (though this year, there weren’t really any faves) and the half-time show.  My husband ended up making fried ravioli and chili and my son had picked out some chili con queso dip that we had with tortilla chips.  So, yummy eats were had while half-watching an uninteresting game.

Valentines

2.  Preparing Valentines – The husband and I don’t celebrate Valentine’s Day.  I hate that there’s a holiday to “force” people to profess their love for one another.  Maybe it’s my cheapness but I have told my husband he should NEVER buy me roses on Valentine’s Day!  I’d like to think that we show our love to each other all year round.  However, I do enjoy seeing the enjoyment that the kids get in celebrating Valentine’s Day.  I have tried to not get Pinterest-envy at all those moms out there making creative, homemade Valentines for their kids.  I just hate devoting that time (21 and 23 kids in each class!) to a card that will be thrown out as soon as a child gets home from school.  So, off to Walmart we went, where the kids got to pick out their Valentines and candy of choice for their classmates (Skylanders for my son and kittens and puppies for my daughter, and Tootsie Pops for both).  So, one of my kids’ favorites of the week was picking out and writing their Valentines.  Today they will be having celebrations at school and be bringing home lots of Valentines from friends.

3. Favorite bookmarked recipe of the week – These Spicy Fish Taco Bowls with Cilantro Lime Slaw from Pinch of Yum.  I have been enjoying making burrito/taco bowls and these sound so tasty!  These might even make an appearance on next week’s menu when the kids don’t have crazy Friday afternoon/evening schedules.  It will make a nice change from our usual pizza Fridays and will fit in with no meat Lenten Fridays.

4. Better Call Saul – My husband has been binge watching this show all week.  We watched the first one together, but I wasn’t all that into it. He has been a fan of the lead actor Bob Odenkirk since the mid 90’s and the HBO comedy sketch series Mr. Show with Bob and David. Better Call Saul is the prequel series of Breaking Bad where the character Saul Goodman made his debut. Saul is a lawyer with pretty low moral standards and worse television spots on late-night TV. It’s a pretty serious and complex role but there’s always an underlying wink of comedy. He’ll surely finish the series this week because he clearly enjoys it.

5.  Yoga Camp – I found Yoga Camp from YouTube channel Yoga with Adriene from another blogger’s Friday Faves.  Unfortunately, I don’t remember and can’t give proper credit.  I’ve taken yoga classes over the years at different gyms that I’ve belonged to.  I’ve been meaning to get back into it and after seeing another blogger’s post about this Yoga Camp, it was the perfect motivation to get started.  So far, I have completed five of the 30 days.   I really like Adriene.  She’s very down-to-earth and relatable.
